Owners of the Local Butcher on Method to the Madness
On Friday, March 14th @ noon, Method to the Madness and host Lisa Kiefer will interview Monica and Aaron Rocchino, husband and wife co-owners of The Local Butcher in Berkeley’s gourmet ghetto. They will discuss the challenges of finding seasonal, locally-sourced, sustainably-raised, fresh meat that you can trust. Dedicated to butchering ‘whole’ animals and understanding what it means to cook “nose to tail”, they deal with no middlemen, all animals come whole, and the shop uses every part. With deep roots in the food community, Monica and Aaron will discuss how they are meeting the challenges of food sustainability and what challenges remain for all of us.
